Well there are two things you are talking about here. The first is a cart system, for that I suggest using http://www.webforcecart.com/ it’s the easiest class for cart management in PHP I have found.
You could also use Paypal to actually track the cart, find a demo and sign-up at: http://www.paypal.com/cgi-bin/webscr?cmd=p/xcl/rec/sc-intro-outside
